Magnolia No-Bake Energy Bar Recipe

Ingredients:

  • 1 cup Medjool dates, pitted (about 10)

  • 1/2 cup unsweetened nut butter (almond or peanut work well)

  • 1/4 cup pumpkin seeds

  • 1/4 cup sunflower seeds

  • 2 tablespoons chia seeds

  • 1/3 cup dried cranberries or raisins

  • 1/3 cup plant-based protein powder (vanilla or unflavored)

  • 1 tablespoon cacao nibs or dark chocolate chips (optional)

  • Pinch of salt

Instructions:

  1. Soak dates in warm water for 5 minutes if dry. Drain.

  2. In a food processor, blend dates and nut butter until smooth.

  3. Add seeds, dried fruit, protein powder, and salt. Pulse until combined — the mixture should be sticky but not too wet.

  4. Press into a parchment-lined square pan. Flatten with a spatula.

  5. Sprinkle chocolate chips on top (if using). Press in gently.

  6. Chill in the fridge for 1 hour before cutting into bars.
